FOOD PRESERVATION

(Only exhibits canned after last year’s fair)

Use UWEX Guidelines or USDA for safe Food Preservation.

No exhibitor shall make more than one entry in any one lot number. Pint or quart quantities may be exhibited, but pints are preferred. All exhibits must be in standard, clear (not tinted) mason jars to qualify for judging. Standard mason jars are purchased specifically for canning purposes. Please remove screw band. Jars must be clean, not sticky.

All exhibits in Class J through N must be labeled with the following information: Source of recipe, name of product, date canned, method of preparation (hot pack or cold pack), method of processing (boiling water bath and time of processing) or pressure cooker, pounds of pressure, and time under pressure.  Labels will be furnished by the fair.

No open kettle canning accepted! Exhibitors should check with County Extension Office for any and all updates on processing times.
